Mandarin Kisses

Ingredients for biscuits:

220gm (appx 7 oz)
butter

1/2 cup icing sugar

2 tablespoons grated mandarin
rind
-
1 tablespoon cornflour
-
1 cup plain flour
-
1/2 cup self-raising
flour
-
Extra icing sugar

Ingredients for biscuit
filling:

60gm (appx 2 oz)
butter
-
1 cup icing sugar
-
2 tablespoons mandarin
juice

- Method:
- Allow the butter to warm
to room temperature, then mix the butter, sifted icing sugar and mandarin
rind together in a mixing bowl until soft and creamy.
- Add the cornflour to the
mix and blend it in well
- Then add the sifted flours
to the mix, and beat well again until smooth
- Fill a piping bag fitted
with a star tube attachment with the mix, and pipe it into 2.5cm (appx 1
inch) shapes on a lightly greased oven tray
- Bake the biscuits in a moderate
oven for around 15 minutes or until pale golden brown
- Remove the biscuits from
the oven and allow to cool on a wire rack
- To prepare the mandarin cream
filling, beat the softened b
utter and sifted icing sugar together until smooth,
gradually adding the mandarin juice as you do so

When the biscuits are cool,
spread the filling over the base of one biscuit and sandwich another biscuit
on top

Dust the completed biscuits
with the sifted extra icing sugar

Notes:

This recipe will make
approximately 15 biscuits
-
If you don't have a piping
tube and/or star attachment, you can simply spoon the mix onto an
oven tray. The biscuits will look much plainer, but will taste just as
delicious.
