Mandarin Sole

Ingredients:

4 sole fillets
-
Olive oil (just enough to
brown the fish)

1/4 cup soy sauce
-
1/4 cup chopped shallots
(also called scallions)

1/2 teaspoon ground
ginger
-
1/2 cup chicken broth or
chicken stock
-
1/2 cup fresh mandarin
juice
-
Ground black pepper to
taste

Method:

Brown the fish fillets in
hot olive oil over medium heat on the stovetop

Mix the remaining ingredients
together in a mixing bowl and pour the mixture over the fish

Cook gently until the fish
is tender (around 10 minutes)

Drain and serve

If you don't have sole available,
