Mandarin Sole
Ingredients:
  • 4 sole fillets
  • Olive oil (just enough to brown the fish)
  • 1/4 cup soy sauce
  • 1/4 cup chopped shallots (also called scallions)
  • 1/2 teaspoon ground ginger
  • 1/2 cup chicken broth or chicken stock
  • 1/2 cup fresh mandarin juice
  • Ground black pepper to taste

Method:
  • Brown the fish fillets in hot olive oil over medium heat on the stovetop
  • Mix the remaining ingredients together in a mixing bowl and pour the mixture over the fish
  • Cook gently until the fish is tender (around 10 minutes)
  • Drain and serve

Notes:
  • If you don't have sole available, most other fish can be easily substituted
  • When served, this dish can be complemented by any of the mandarin salads listed elsewhere in our recipes section
