Mandarin Marinated Chuck Roast
Ingredients:
  • 1 cup of mandarin juice
  • 1/4 cup soy sauce
  • 2 tablespoons of vinegar
  • 1.5kg (appx 3 lbs) boneless chuck roast

Method:
  • Combine the mandarin juice, soy sauce and vinegar in a large shallow baking dish and add the roast.
  • Cover the dish and marinate for several hours (overnight is even better) in the refrigerator, turning the roast occasionally
  • Remove the roast from the marinade and place it in a roasting pan
  • Bake the roast uncovered at 200o C (appx 375o F) in the middle of the oven for around 30 minutes
  • Remove the roast from the oven, pour the marinade mix over it, cover it, then return it to the oven and bake at 180o C (appx 350o F) for a further 2.5 hours or until done

Notes:
  • This dish can be served accompanied by any of the mandarin salads listed in this section, or with baked vegetables
