Mandarin Marinated Chuck Roast

Ingredients:

1 cup of mandarin juice
-
1/4 cup soy sauce
-
2 tablespoons of vinegar
-
1.5kg (appx 3 lbs) boneless
chuck roast

Method:
-
Combine the mandarin juice,
soy sauce and vinegar in a large shallow baking dish and add the roast.

Cover the dish and marinate
for several hours (overnight is even better) in the refrigerator, turning
the roast occasionally

Remove the roast from the
marinade and place it in a roasting pan

Bake the roast uncovered
at 200o C (appx 375o F) in the middle of the oven for
around 30 minutes

Remove the roast from the
oven, pour the marinade mix over it, cover it, then return it to the oven
and bake at 180o C (appx 350o F) for a further 2.5
hours or until done
