Mandarin Salad With Kiwi Fruit

Ingredients:

1 large lettuce, shredded

350gm (appx 11 oz) fresh
mandarins
-
90gm (appx 3 oz) slivered
almonds
-
1 large brown or white onion,
thinly sliced or finely chopped
-
2 kiwi fruit, peeled and
sliced

Method:

Wash the lettuce thoroughly,
rinse and shake dry

Arrange the lettuce on 4
plates
-
Add the mandarin slices,
kiwi fruit slices, onions and almonds
-
Garnish with your favourite
salad dressing

Notes:
-
An orange balsamic dressing
goes particularly well with this simple salad - but if you
don't have any handy, any balsamic-based dressing will do

If you don't like almonds,
other nuts that blend well in this salad include walnuts, pine
nuts, finely sliced water chestnuts or peanuts
-
If you wish, you can expand
beyond a basic lettuce to a general mix of salad greens. Consider adding
spinach leaves, finely diced celery, thinly sliced carrot strips or other
salad favourites

If you don't like onions,
finely diced shallots or radishes also work well as substitutes. You can
vary the amount of onion used to suit to your own taste
