Spiced Mandarins

Ingredients:

12 fresh mandarins
-
2 cinnamon sticks
-
2 whole cloves
-
4 cups water
-
4 cups sugar (1kg or appx
32 oz)

1/2 cup of an orange-flavoured
liquer (eg: Cointreau)

Method:
-
Use a vegetable peeler to
remove two long strips of peel from two of the mandarins. Set the peel aside
in a refrigerator

Completely peel all 12 mandarins
and pierce each one in a few places with a fork. Place the peeled mandarins
in a flat baking tray

Combine the sugar and water
in a large saucepan and bring the mix to a boil

When boiling, reduce the
heat to a low simmer

Add the cloves and cinnamon
sticks to the mix, then simmer uncovered for around 10 minutes (or until
the mixture is syrupy)

Add the orange liquer
-
Pour the hot syrup over the
mandarins, then cover and allow to cool

Refrigerate until ready to
serve

Garnish individual serves
with peel

This recipe serves 12
people and is a Christmas favourite
-
If you want to prepare it
for less people, simply adjust the quantities of ingredients downwards
as required
-
You can serve up each spiced
mandarin by itself, or with small additions. Ice cream or whipped
cream both work very well with this dish. So does a small flourish of
complementary fruits (eg: a few berries or a small amount of crushed
pineapple)
