Mandarin Sorbet

Ingredients:

Grated rind of 1
mandarin

1 1/2 cups water
-
1 cup sugar
-
2 cups mandarin juice
-
1 cup uncarbonated mineral
water (plain tap water will do in a pinch)

Method:

Simmer the rind with the
water and sugar in medium saucepan for around 20 minutes

Cool the mix, then strain
and set aside the rind

Combine the sugar syrup with
the mandarin juice and mineral water

Freeze the mixture in an
ice-cream maker according to the manufacturer's directions

Fold in the rind just before
the sorbet firmly freezes

Notes:
-
If you don't have an ice-cream
maker - and many people don't - an alternative way to make sorbet is to
refrigerate the mix in your freezer until it's almost frozen, then run it
through a blender or food processor with metal blades.

Beat the mix until it reaches
a smooth and creamy consistency, then refreeze until it's fully frozen
again.
