Red Wine Sauced Mandarins
Ingredients:
  • 1 cup dry red wine
  • 1 cup water
  • 3/4 cup sugar
  • 1 cinnamon stick
  • 2 whole cloves
  • 2 slices lemon
  • 6 fresh mandarins

Method:
  • Combine the wine, water, sugar, cinnamon, cloves and lemon slices and bring to a boil, then reduce heat and simmer for around 3 minutes
  • Peel the mandarins, reserving the skins
  • Section the mandarins (remove any fibrous material) and drop the sections into the hot syrup
  • Remove the white fibrous portion from the mandarin skins (if there is any) and cut the rinds into very fine julienne strips
  • Sprinkle the strips over the mandarins in the red wine mixture and chill the result in the refrigerator
  • Serve in chilled dishes

Notes:
  • This dish can be accompanied by ice-cream or whipped cream if you wish
  • A small farce of complementary fruits also makes a nice garnish
