Red Wine Sauced Mandarins

Ingredients:

1 cup dry red wine
-
1 cup water
-
3/4 cup sugar
-
1 cinnamon stick
-
2 whole cloves
-
2 slices lemon
-
6 fresh mandarins

Method:
-
Combine the wine, water,
sugar, cinnamon, cloves and lemon slices and bring to a boil, then reduce
heat and simmer for around 3 minutes
-
Peel the mandarins, reserving
the skins
-
Section the mandarins (remove
any fibrous material) and drop the sections into the hot syrup
-
Remove the white fibrous
portion from the mandarin skins (if there is any) and cut the rinds into
very fine julienne strips
-
Sprinkle the strips over
the mandarins in the red wine mixture and chill the result in the
refrigerator
-
Serve in chilled dishes

A small farce of complementary
fruits also makes a nice garnish
